Tamarind Salsa

We prepare a thick, tangy brown sauce which can be complex in flavor, but is not hot. The distinctive tastes of chadon beni (similar in taste to cilantro), garlic and Trinidad pimento peppers permeate every mouthful, with those flavors complimented by the freshness of celery.  A great condiment on almost everything, especially Trinidad pelau, samosas, phoulourie, meat sandwiches, fried fish & chicken, and fried Pork rinds (chicharron).
